Adobo Chicken

3 cloves Garlic, crushed
1 Shallot(s), minced
1/2 teaspoon Cumin
1/2 teaspoon Oregano
1/2 teaspoon Thyme
1 tablespoon Parsley, chopped
1 tablespoon Cilantro, chopped
1/4 cup Lime juice
2 1/2 tablespoon(s) Olive oil
Salt and pepper to taste

In a small food processor, add the garlic, shallot and herbs till it turns into a thick paste, then whisk in the oil and lime juice.   Its going to look real slimy green.

Add the chicken pieces and refrigerate for about an hour, longer if you can.  Grill and enjoy!
