Latkes (Potato Pancakes)


2 pounds Potato(s)
2 Egg(s), beaten
1/4 cup Flour
1/4 cup Onion(s)
1 teaspoon Salt
1/2 teaspoon Pepper

Shred potatoes and grate the onion.

In large bowl combine the eggs, flour, onion, salt and pepper.

Add potatoes.

In large skillet, heat some oil for frying.

Spoon the potato mixture into hot oil and flatten with back of spoon.

Fry each side until golden brown.
