Vinegar Sauce

These are very common in the Carolina’s.  I was never a huge fan of vinegar based BBQ sauces (maybe that’s why this category only has 1 recipe?).    Then, we had a carry-in at work and I brought several pounds of pulled pork.  Jim, a fellow nurse, brought this sauce in that night.  CHANGED MY MIND!!!!!  This is the most tasty vinegar sauce I have ever tried!  Thanks to Jim for sharing this most excellent recipe!

Jim’s Carolina Vinegar Sauce

1/2 cup Red wine vinegar
1/2 cup White wine vinegar
1/2 cup V8 juice
1/2 cup Honey mustard
1/8 cup Worcestershire sauce
1/8 cup Onion flakes
1/8 cup Garlic flakes
1/8 cup Brown sugar, dark
3 – 6 tablespoon Red pepper, crushed
1 tablespoon Black pepper
3 teaspoons Salt

Combine all ingredients in large sauce pan and bring to a simmer.  DO NOT let this get to a full, rolling boil!  Let it cool and refrigerate….the longer the better.

Makes about 1 quart.
