Golden Harvest Chowder

An end of the season Farmer’s Market bonanza.  All the ingredients can be bought fresh somewhere in your town!

Though this is a great veggie dish, add 1 lb. of your favorite sausage to really add some flavor!

1 cup Broccoli florets
1 cup Zucchini(s)
1 cup Carrot(s)
1 cup Tomato(s), fresh, chopped
1 cup Corn
1 cup Onion(s), diced
1 cup Celery, diced
3/4 cup Butter
6 tablespoons Flour
8 cups Chicken stock
2 teaspoons Salt
1 teaspoon Black pepper
1 teaspoon White pepper
2 teaspoons Thyme, dried

Chop veggies into bite sized pieces.
In a large pot,  saute onions and celery in butter for about 5 minutes. Add flour and stir and cook for 2 minutes.
Slowly add 2 cups of chicken stock whisking constantly.
Add remaining 6 cups of stock and all the veggies and the sausage.
Bring to boil and add seasonings.
Reduce to simmer and cook for several hours, until veggies reach desired firmness.
