Why magical you ask? Because they don’t drive my blood sugar through the roof. Now, that’s magic!!
1 cup Peanut butter
1 1/3 cups Splenda or sugar
1 teaspoon Vanilla extract
Mix peanut butter, 1 cup of Splenda, egg and vanilla.
Roll into walnut sized balls.
Place balls on a greased baking sheet. Press into criss cross shape with a sugared fork.
Bake at 350º for 12 minutes. Sprinkle remaining sugar on baked cookies.
