Many of the following recipes come from my maternal grandmother, Kathryn Orella. Most called her Kate and she was the inspiration for our first child’s name!
Nona was from northern Italy, up around the Turin area. This style of Italian cooking is much different than the more popular Sicilian or southern styles.
Pasta was a main dish in our home almost every Sunday. The base for many of the pasta dishes is the sauce. Nona’s was made from all canned ingredients (too far north to have fresh tomatoes!) with very few spices and is very thick. The “secret” to the flavor? Well, you’ll just have to check out the recipe!
